Warmer weather is on the horizon, and I am craving all sorts of salads. And this Broccoli Slaw Salad is the top of my cravings list! 

When I make this salad I do a double batch, because I love leftovers for lunch. I could literally eat this salad on the daily. This is a perfect salad for entertaining too! A great side dish for those spring and summer cookouts or if you are like me a main dish. You could even add grilled chicken to add a bit of protein too. Honest, if you have never had this salad before you have to try it.

Broccoli Slaw Salad

This is a staple dish for any family gathering that we have. Our whole family loves Broccoli Slaw salad from young to old. We always make a giant batch of this and eat on it for several days. This is one of those that seems to get better with a day or two of sitting. My only complaint is the noodles get soggy, I like the crunch!! This one is so easy to put together, here is how I made it. I hope that you enjoy it as much as we do!

Ingredients: Broccoli Slaw Salad

  • 10 oz broccoli slaw *I add two love it this way
  • 12 oz broccoli florets chopped
  • 2 bell peppers chopped- I like yellow and red
  • 1 bunch green onions sliced
  • 2 ramen noodles break them up: do not cook them
  • 3/4 cup roasted sunflower seeds
  • 3/4 cup sliced almonds
  • Dressing:
  • 2/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 2/3 cup sugar
  • 2 ramen seasoning packets

Instructions: Broccoli Slaw Salad

  • Wash and prepare all veggies and cut if not already pre cut. 
  • Place all prepared veggies in a large bowl 

Take the ramen noodles and break them up. You can do this on a hard surface with a rolling pin or hand and set aside. (you do not cook the noodles). I am a big fan of Bamboo cutting boards and I use the all the time. If you are looking to add them to your cooking arsenol then check these out here

Dressing

  • In a medium size bowl Add all dressing ingredients including the ramen seasoning packet (not noodles)  and combine well with whisk. 
  • Once dressing is combined and mixed well add to top of the veggies and mix well. 
  • Then add all nuts, and broken ramen noodles and mix or shake well. 

Let set in refrigerator for 30 mins and serve.

In the video, I had a big enough bowl with lid to mix dressing right in with slaw and veggies. However, you can use a separate bowl to whisk the dressing first and pour over top in bowl too. 

You can also turn this dish into a main meal with some grilled chicken too.
