Who doesn't love taco night and Mini Taco Bites are a perfect fitt! Tacos are a staple in any crazy busy mamas meal time rotation. So, if you love a good taco night, but are bored with the same ole' same ole' taco night, you have to switch it up with these incredibly easy Mini Taco Bites.

They aren't just any old boring mini taco bites they are double decker mini taco bites. They are mouthwatering and not only make an amazing dinner but would also be great for bite size appetizers too. If you love a variety of ideas for Taco Tuesdays, you have to try these tasty SLOW COOKER CHICKEN ENCHILADAS they are another great option for a Tuesday and so easy to put together and delicious too!

I mean look at these, don't they look incredible!? You can pile them with toppings like mine shown here, or you can leave them plain for those picky easters.

Taco Bites

Ok here is how I put together these little double decker Taco Bites!

Ingredients: Taco Bites

  • 24 wonton wrapper
  • 1 lb ground beef
  • 2 tbsp taco seasoning : one packet
  • 16 oz cheese grated – we love to shred our own with this CHEESE SHREDDER HERE
  • 8 oz refried beans (usually about 1/2 can)

Optional Toppings

  • lettuce
  • pico de gallo
  • black olives
  • green onions
  • sour cream
  • salsa or hot sauce

Any toppings you desire. We love lettuce, green onion, sliced olives, pico de gallo, and this mama loves avocado hot sauce.

Instructions: Taco Bites

Preheat oven to 350

In a skillet brown up some ground beef and add taco seasoning. Love this meat masher for any time I am cooking up ground beef.

In a muffin tin add 12 wonton wrappers and push down into each tin. If you have a non stick muffin tin you shouldn't need to spray with non stick spray, however if you don't have a non stick you will want to spray it. I love this non stick baking set HERE – use it all the time for cooking and baking.

Add a spoonful (about a tablespoon) of refried beans to bottom of wonton wrapper

Then add a spoonful of taco meat to cover the refried beans.

Then add cheese to the top of the meat enough to cover.

Then add another wonton wrapper on top of the cheese, meat and beans.

Once you add the second wonton wrapper, you will scoop a heaping spoonful of taco meat on top and then cover with cheese on each muffin tin.

Once all 12 are covered with grated cheese place in oven at 350 for 15 mins. After 15 minutes, they should be nice and crispy. Once they are done, take them out of the oven and let them cool for a few moments.

Once cooled, you will want to dress with desired toppings and serve.

I decided to leave all but mine plain with no toppings so my kids could use the toppings they desired.

I love serving them on a board with toppings set out for them to choose.

The awesome thing about these little taco bites, they can be customizable for everyone. So instead of putting the toppings on prior to serving, you can serve them with just the meat, beans and cheese; and serve the toppings separately. You can display the taco bites on a board and toppings separate as in a build your own taco bites night. So this way even the pickiest of eaters can enjoy!
