Slow Cooker Corned Beef and Cabbage

Let's get you cooking and enjoying home cooked meals in working smarter not harder!

Here is how I made the most amazing Slow Cooker Corned Beef and Cabbage.

Ingredients: Slow Cooker Corned Beef and Cabbage

  • 4 lb corned beef brisket with spice packet
  • 1 1/2 cup water
  • 2 lbs potatoes small
  • 6 carrots cut into sticks – I only had 2 by the time I got them from the grocery store, so I am using what I have- and I am not going to complain about the kids eating them up! Ha
  • 1 cabbage medium size

Creamy Horseradish Sauce

  • 3/4 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp horseradish
  • 1 tbsp red wine vinegar
  • freshly cracked pepper to taste

Instructions: Slow Cooker Corned Beef and Cabbage

Place the corned beef in your crock pot. Top with seasoning packet that comes with corned beef- most are not separate rather marinating already in the package- take a bit of water and mix in package to get all seasoning out for the meat. Then Pour 1 1/2 cups of water on top of the corned beef. Cook on low for 6-8 hours.

Cut potatoes and carrots and place in slow cooker with corned beef about 3 hours into cooking the corned beef.

Cut your cabbage into wedges and about 7. 5 hours in and about 30 minutes remaining add your cabbage wedges to the slow cooker and cover. After about 30 mins your cabbage will be ready along with the rest.

While cabbage is cooking, Combine all ingredients in a bowl and mix well. Set aside

Once the 30 minutes is up and cabbage is ready. Take the corned beef out of the slow cooker and place on a cutting board and slice – cutting against the grain of the meat.

Once you have sliced the corned beef you can platter it with the veggies or place back in slow cooker with veggies and serve out of the slow cooker.

Drizzle over the top the creamy horseradish sauce or put in a serving dish for those who want to enjoy the corned beef with the sauce.
