It’s Slider night, Rueben Sliders that is! These 3 words are probably my kids favorite words when it comes to dinner. Slider night is not only the most desired, but the easiest night at our house. My kids, who are growing up so fast have always loved Sunday nights for this style of dinner. So over the years, I have turned just about everything in to sliders! 

And this corned beef and cabbage recipe was no exception! They made the most epic Rueben sliders and what’s even better it used up all the leftovers. Totally a crazy busy mama win.  No waste, more economic and a new meal in minutes! I don’t know a mama who wouldn’t get excited about that. 

Look at this deliciousness! We only had half of us at dinner tonight, so I did half the amount of sliders I would normally do but come to think of it these would have been delicious leftover so next time no matter who is home I am making all 12!

Rueben Sliders

Think of all the possibilities of slider night at your house and how simple this concept is. My youngest daughter’s favorite are these BIG MAC SLIDERS if she could eat them every Sunday she would be one happy girl! So if you are looking for more slider recipes you have to check this one out it undoubtedly be a kids favorite! Pair it with some homemade Five Guys fries (recipe coming soon) and you will have home made fast food style meal all at home. 

Put a slider night in each week on rotation at your home, you will be so glad you did.

Here is how I made these epic and easy Rueben Sliders!

Ingredients: Rueben Sliders

  • 2 lbs corn beef : can use pastrami too
  • 16 oz sauerkraut
  • 1/4 cup thousand island dressing
  • 12 oz hawaiian rolls
  • swiss cheese

Instructions: Rueben Sliders

  • Preheat oven to 350
  • Cut slider buns in half and place on sheet pan – I use parchment paper for easy clean up
  • Warm up corned beef and sauerkraut in skillet over medium heat – I love this meat masher it one of my top kitchen gadgets and have several in my home to ground beef, warm up meat, shred chicken and even scramble eggs.   • Drizzle thousand island dressing down on the bottoms of each bun
Rueben Sliders
  • Once meat and sauerkraut is warm start building the sliders with meat first on top of the thousand island dressing
  • Once you have all the meat on the bottom of the sliders you wall want to add cheese. I would normally use swiss cheese but we had provolone and a I am using that.

  • Top with sauerkraut and place tops of buns on
  • Place in oven for approximately 15 mins until cheese melts.
  • Once cheese is melty, pull out of oven and serve

Don’t have left over corned beef? That’s ok use pastrami it’s just as yummy! You could also baste on melted garlic to the top of the buns giving them a rich garlic buttery taste.
