I buy a Rotisserie Chicken every time I get groceries. You can use it for so many recipes, and it makes meals even quicker and easier! And as Crazy Busy Mamas, that is something we all need! Okay so how are we going to use that Rotisserie Chicken today? In a Chicken Pot Pie Casserole!
I don't know about your family, but mine love Chicken Pot Pie! And this casserole is definitely one of my favorites! It is a great way to mix things up and it is PERFECT for any crazy busy mama with picky eaters!
Here is how I make it!
Chicken Pot Pie Casserole Ingredients:
1 Stick of Butter
1 Rotisserie Chicken
1 Small Bag of frozen Mixed Vegetables
2 cans Cream of Chicken Soup
2 cups Chicken Broth (or water)
2 cups Milk
2 cups Bisquick
Crazy Busy Mama Tip: There is a cleaner and easier way to debone rotisserie chicken! Just Seal the Chicken in a ziplock baggy and use your hands to work the chicken off of the bone! This is an absolute game changer! You can see my how-to guide here:
Directions:
Layer 1 stick of melted butter and shredded rotisserie chicken to the bottom of a 9×13 casserole dish.
Next add a layer of frozen veggies
Mix together 2 cans of chicken soup and 2 cups chicken broth (or water) and pour into pan.
Mix 2 cups milk with 2 cups Bisquick and pour overtop ingredients in pan, but DO NOT mix in!
Bake at 350 for 45 minutes
Let it set for 20 minutes
ENJOY!
