If there’s one thing I know for sure, it’s that dinner doesn’t wait. Not for the piles of laundry mocking me from the hallway. Not for the emails that keep pinging when I’m already mentally tapped out. And definitely not for the teenage boy standing in my kitchen every night at 5:32 p.m. asking, “What’s for dinner, Mom?”

Friend, let me just be honest with you—I don’t always have it together in the kitchen. I’m a Crazy Busy Mama, remember? But when I find a recipe that checks all the boxes—easy, creamy, kid-approved, and tastes like it came straight out of a restaurant—I run to share it with y’all.

So today, I’m bringing you a recipe that’s saved me more times than I can count: Copycat Chicken Alfredo. Think Olive Garden vibes… but in your own kitchen… in your sweatpants… with no judgment if you’re eating it straight from the pot with a wooden spoon. (Been there.)

WHY COPYCAT?

I mean why not?

Let’s rewind for a second. The first time I had chicken alfredo at a restaurant, I remember thinking, This is what angels eat. It was rich, creamy, garlicky—but light enough that I didn’t feel like I had to roll myself out the door. And of course, the kids devoured it, which in mom terms is the equivalent of a five-star Michelin review.

But let’s face it: feeding a family of five at a restaurant adds up real quick. Especially when two of your kids think ordering soda is a personality trait and your youngest only eats the breadsticks.

So what’s a Crazy Busy Mama to do?

Copy. That. Dish.

And friend, this copycat Chicken Alfredo is so good that even my kids thought it came from Olive Garden. (Pro tip: put it in a takeout container once and they’ll never know!

REAL-LIFE, REAL-TIME, REAL CREAM

Let me just paint a picture of what dinner hour looks like in the Conway house:
    •    The dogs are barking at a squirrel.
    •    One kid is yelling from upstairs about a missing shoe.
    •    Another is asking me to sign a permission slip that’s due yesterday.
    •    I’m burning the garlic bread… again.

But in the middle of that chaos? This creamy, dreamy Alfredo sauce is simmering on the stove, and the smell alone could bring world peace. Or at the very least, get everyone to the table without being called five times.

And that, my friend, is a win.

Ingredients

  • 1 tsp Garlic powder 
  • 1/2 cup Butter 
  • 2 tbsp Cream cheese 
  • 1 pint Heavy cream 
  • 1 cup Parmesan cheese, 
  • fresh Salt and pepper

Directions

  • In a skillet over medium heat melt butter and add garlic
  • Once a paste has been made slowly add in heavy cream and milk whisking as you go
  • Once combined well, add cheeses
  • Then add salt and pepper to taste
  • Once sauce coats the spoon fully it is ready to enjoy!
  • enjoy on it's own as a dipping sauce or over pasta
  • Serve with freshly Parmesan cheese if desired

Alfredo sauce will thicken as it sets, if you need to thin it out you can add milk. Once sauce coats the spoon fully it is ready to enjoy!
