Here is how I put together, this Cheesy Ranch Taco Pasta.

Ingredients: Cheesy Ranch Taco Pasta 

  • 1 lb ground beef
  • 24 oz Velveeta Shells and Cheese
  • 1 cup of water
  • 1 1/2 cups heavy whipping cream
  • onion diced – you can also use minced as well.
  • 10 oz rotel
  • 2 tbsp ranch dry seasoning
  • 2 tbsp taco seasoning
  • 2 cups cheddar shredded – also love to use pepper jack or montery jack too

Instructions: Cheesy Ranch Taco Pasta 

  • Brown ground beef and onion in skillet
  • Add ranch and taco seasoning to the ground beef and onion
  • Add rotel undrained to the skillet
  • Add cheese from velveeta kit along with noodles and mix well. Let it come to a simmer and put lid on skillet and let it cook for about 7 minutes.
  • Add heavy whipping cream and stir in then add 2 cups of shredded cheese – also love to use pepper jack or montery jack too

  • Cover on medium heat allowing cheeses to melt. Once cheese melts it is ready to serve
  • Garnish with fresh cilantro if desired.
Side Idea:

Serve with side salad or green beans and this will for sure be one your kids will love. 


Crazy Busy Mama Tip:

When you purchase your beef purchase in bulk and before you put it away brown up some and store in freezer baggies labeled with date to use for future use on those nights where you don't have a ton of time. Just add cooked beef to skillet and warm up and break apart. Helps to save time in those busy nights.
