Low Carb Egg Bites

Here is how I put the low carb egg bites together.

Ingredients: Low Carb Egg Bites

  • 12 slices ham
  • 9 eggs
  • 1/4 cup whipping cream
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • salt and pepper to taste
  • 2 cups cheese shredded cheddar

Instructions: Low Carb Egg Bites

  • Preheat oven to 350
  • In a large bowl combine eggs, heavy whipping cream, garlic and onion powder salt and pepper to taste
  • Whisk egg mixture until well combined.
  • Spray 9×13 muffin tin and add a slice of ham to each tin, pushing down with hands until it fills entire muffin tin.
  • Then take a scoop of egg mixture and put in each tin with ham.
  • Add a few tablespoons (or desired amount) of cheese to each egg bite.
  • Bake at 350 for 15-20 minutes until eggs are done.
  • Allow to cool for a few minutes then enjoy

The low carb egg bites are super versatile. You can add veggies or more meats to them as you wish. Even add different cheeses as well. This is a great meal you can meal prep for. If you are needing to make breakfast bites for on the go for the week, simply double recipe (if needed) and store in baggies in fridge for up to 5 days. You can also freeze for up to 3 months, in an airtight baggie if needed. Take them out the night before allow to defrost in refrigerator and pop in microwave for 20-30 seconds.

    Yes, I love all your recipes and sometimes before I could never find them. I’m 75 years old. I don’t know much about computer and it makes me so mad because the recipes don’t show up. My husband has cancer but he gets check every 6month!!! Thank God every day for it!!! He still works retired house on our neighbors farm. your recipes too because and he likes to carry something to work or before he goes to work in the morning!!!! I love this breast paining it so easy, but can we use regular milk instead of heavy cream? I never had that in my refrigerator.

    Instead of heavy cream, I added cottage cheese in a blender with the eggs. I also added a tablespoon of browned sausage with peppers and onions. Teenager approved!
