Who else loves a grab and go breakfast, French Toast Muffins to the rescue! To be honest, I don't know a mama who doesn't love a quick easy grab on the way out the door on those hectic mornings. So these little French Toast Muffins are perfect for a breakfast on the go, especially if your kids have you running in all sorts of directions. Can you relate?

Not to mention, they are absolutely scrumptious too!

French Toast Muffins

Ok here is how I put these scrumptious French Toast Muffins together!

Ingredients: French Toast Muffins

  • 12 pieces cinnamon raisin bread tore or chopped up into little pieces
  • 5 eggs
  • 1/2 cup whipping cream
  • 1/2 tbsp Vanilla extract – SAVA
  • 1/4 cup coffee creamer I love to use a cinnamon one or my homemade CINNAMON HONEY CREAMER
  • 1/4 cup milk
  • dash cinnamon
  • sprinkle brown sugar

Instructions: French Toast Muffins

  • Preheat Oven to 350
  • In a large bowl mix up eggs, all milk, whipping cream, creamer, milk, creamer, cinnamon, vanilla (all ingredients excluding brown sugar)
  • Tear into little pieces or chop into little pieces of cinnamon raisin bread and add to the egg mixture and mix well.
  • Place muffin wrapper or silicone liner into muffin tin and scoop a mixture of breading into each muffin tin. About 1 1/2 tablespoons of mixture into each muffin tin.

They should look like this in the picture below.

  • Sprinkle Brown Sugar on top of each muffin prior to placing into the oven.

Bake at 350 for 15-18 minutes until done

Pick a day on the weekend and make a batch of these! These French Toast Muffins are easy to put together ahead of time for those hectic mornings, giving you something to nutritious to grab and go instead of hitting the drive through on the way to work. If enjoying at home you can enjoy topped with butter with maple syrup or infused vanilla honey. 

You can store in airtight container in refrigerator for up to 5 days.

You can also replace the creamer with homemade creamer, I absolutely love this CINNAMON HONEY COFFEE CREAMER its so yummy and gives a homemade creamer instead of store bought if worried about those extra unknown ingredients.
