A good hearty soup is just what the soul needs especially during the colder and transitional months here in the midwest. This creamy Italian Tortellini Soup hits the mark! A complete meal in a bowl served with some incredible home made sour dough bread is just perfection! Don't get me wrong, I am no sourdough pro, but in dabbling for a bit I think I have gotten down a basic sourdough bread. Sourdough bread paired with this Italian Tortellini Soup its like comfort in a bowl. To be honest, you don't have to be in a colder climate to enjoy this Italian Tortellini Soup, so matter where you live or what the weather is you will appreciate this easy slow cooker meal.

I mean look at this deliciousness! Side note, I usually add Parmesan cheese to the top for garnish but ran out so you see pictured some mozzarella cheese I shredded up for the top which was also delicious.

Italian Tortellini Soup

Italian Tortellini Soup is few ingredients with an amazing taste! This is a dump and go slow cooker meal that will leave every Crazy Busy Mama with a smile on her face come dinner time. Ingredients: Italian Tortellini Soup

  • 1 lb Italian Sausage
  • 4 oz onion and peppers frozen or fresh
  • 3 tsp garlic powder or minced
  • 6 cups chicken broth
  • 28 oz tomatoes diced
  • 6 oz tomato paste
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 12 oz tortellini frozen tri color
  • 2 cups spinach fresh
  • 1 1/2 cup heavy whipping cream
  • parmesan cheese garnish

Instructions: Italian Tortellini Soup

  • Ground up the pound of Italian Sausage in a medium skillet until no longer pink
  • In a slow cooker add cooked Italian Sausage, peppers and onions, fresh spinach, frozen tortellini, chicken broth, and heavy whipping cream.
  • Stir all ingredients together well until all is covered with liquid.
  • Add all seasonings, diced tomatoes and tomato paste then stir again until well combined.
  • Once combined, you will cover on slow cooker on low heat and cook for 4 hours

Once done, it will resemble this.

  • Lift lid and stir well
  • Serve warm in a bowl with Parmesan cheese.

We normally don't have leftovers on this meal my family usually eats it up! If you have left overs, you can store in airtight container for up to days in the refrigerator.
