Cranberry Pecan Cheesecake Bread

OMG..Y'all have to make this one! But be forewarned, it is addictive! Seriously, it is absolutely delicious! You have to save this one and come back and try it! Hands down the best holiday bread you will ever have!

Here is how I did it

Ingredients:


1 c. butter softened


8 oz package cream cheese, softened


1 1/2 c. sugar


1 1/2 tsp vanilla


4 eggs


2 c. all-purpose flour


1 1/2 tsp baking powder


1/2 tsp salt


2 c. cranberries fresh ( I used fresh) or frozen

1/2 c. chopped pecans optional

Directions-

  • Preheat oven to 350 degrees.
  • In a large mixing bowl cream together butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
  • In another bowl combine flour, baking powder and salt. Slowly mix into wet batter until combined. Until it looks like image below
  • Fold in cranberries and nuts.
  • Pour into two greased 9 in. x 5 in. loaf pans. Bake at 350 degrees for 60 minutes until toothpick comes clean. You can also use 4 mini loaf pans for 40 minutes.

If you don't have a Kitchen Aid mixer you can use any style of mixer, but I highly recommend a Kitchen Aid. I own the classic series and love it. This is the one I use…. https://amzn.to/3NdCkqi

I bought it nearly 20 years ago and have used and abused it throughout the years and it still works like a champ. It is a bit of an investment, however once you make the plunge you will not regret it. Plus, around this time of year you can usually snag them on holiday sale or you could even ask for one for Christmas. And who knows, you may even find one under the tree!

This would be a perfect breakfast bread for Christmas morning! Imagine enjoying alongside your hot coffee as your kiddos open their presents from Santa. It may be the only day you get to enjoy your coffee hot, so relish the moment mama!

Serve warm with a pad of butter or room temperature. For those who love a step by step tutorial there is a video below.

  1. I made this yesterday, and it was Amazing! This will definitely be a keeper. I’m going to make another batch this weekend and might add about a 1/4 cup of dark chocolate chips…I mean who doesn’t love chocolate right!?
