These Braised Short Ribs are amazingly tasty, but I would save it for a not so crazy busy night. Everyone loved how moist and flavorful the meat was and how it just feel off the bone, not to mention it was teenager approved! That right there is a crazy busy mama win! Anytime my kids love a dinner, I make mental note to make that dish more often.

You can make these Braised Short Ribs in a dutch oven or slow cooker, my recipe is tailored to the slow cooker if you are looking to make this in the dutch oven make sure to scroll down to the Crazy Busy Mama Tip area where give you adjustments on cook times for a dutch oven.

Braised Short Ribs

Ingredients: Braised Short Ribs

  • 8 whole beef short ribs bone in
  • salt and pepper to taste
  • 1/4 cup all purpose flour
  • 6 pieces pancetta or bacon
  • 2 tbsp olive oil
  • 1 onion medium
  • 3 carrots whole and diced
  • 2 shallots peeled and minced
  • 2 cups red wine or white wine
  • 2 cups beef broth enough to cover ribs
  • 2 sprigs rosemary
  • 2 springs thyme

Instructions: Braised Short Ribs

  • Chop up carrots and shallots
  • Chop up that pancetta or bacon – we are using bacon as pictured below
  • Salt and pepper the ribs, then dredge in flour. Set aside
  • In a large cast iron skillet , cook the pancetta or bacon over medium heat until completely crispy and all the fat is rendered. Remove the pancetta and set aside. Do not discard the grease.
  • Add the olive oil to the pan with the pancetta or bacon grease, and raise the heat to high.
  • Brown the ribs on all sides, about 45 seconds per side. Remove the ribs and set in slow cooker. Lower the heat to medium.
  • Once the seared short ribs are placed in the slow cooker use the skillet to cook the rest.
  • Add the onion, carrot, and shallot to the pan and cook for 2 minutes. Pour in the wine and scrape the bottom of the pan to release all the flavorful bits of glory. Bring to a boil and cook for 2 minutes. 
  • Add the broth, 1 teaspoon salt, and plenty of pepper. Taste and add more salt if needed. Add the liquid to the ribs; they should be almost completely submerged. Add the thyme and rosemary sprigs (whole) to the liquid. 
  • Cover with the lid and place the slow cooker on low for 6 hours. The ribs should be fork-tender and falling off the bone. At the last minute, skim the fat off the top of the liquid.
  • Serve warm over mashed potatoes spooning a bit of juice over the top.
Side Idea:

These Braised Short Ribs are a meal in one with veggies but we love to serve ours over mashed potatoes. You could also enjoy with a garden salad and dinner roll.

Crazy Busy Mama Tip:

This dish feeds all 6 of us, however depending on the portion sizes for your family you may want to adjust the number of beef short ribs. You must use the bone in for this recipe, it is so much more flavorful this way. You can also prepare this dish in a dutch oven instead of a slow cooker if you wish. Just need to adjust cooking time to a little less about a half hour with the dutch oven. You can substitute bacon for pancetta and much more affordable this way as well. In my opinion, I believe they are very similar in taste. If you decide to skim fat off the top of the broth, use a few pieces of ice and it will help to remove it effectively and quickly. If you are wanting a quick clean up, I highly recommend slow cooker liners this will save time and energy with clean up in the kitchen.
