We like to call this one…Crazy Busy Mama 𝘎𝘰𝘶𝘳𝘮𝘦𝘵 😘💋👩🏻‍🍳 I mean don't all of us Crazy Busy Mama's love a little gourmet without all the fuss?

Easy One Pan Tuscan Chicken served over Angel hair pasta was a massive hit and it's pretty dang easy to put together. I would definitely save this one for a weekend or a night where you aren't running in all sorts of directions as it does take closer to an hour from start to finish, but the actual “work” of putting this dish together only takes about 10 mins of prep including the pasta. It not only looks gourmet but thats that way too. It's one once you try you will be putting it on rotation for your family.

This dish was one of my late husbands favorites. He would get so excited to see this Tuscan Chicken Pasts on the menu. Gosh I miss him so much. I am going to have to make this one again soon in honor of him. Tuscan Chicken Pasta

Ok, without further ado, here is how you make this delicious Tuscan Chicken Pasta dish.

Ingredients: Tuscan Chicken Pasta

  • 1 1/2 lbs chicken thighs
  • 1 tbsp Garlic Salt
  • 1 tbsp pepper
  • 1 1/2 tbsp paprika
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 cups spinach fresh
  • 1 cup tomatoes chopped
  • 1/2 cup sundried tomatoes
  • 1 1/2 – 2 tbsp minced or fresh garlic
  • 4 oz butter
  • 3/4 cup parmesan cheese

Instructions: Tuscan Chicken Pasta

  • Preheat oven to 375
  • Grate Parmesan cheese and set aside.
  • After trimming the fat off, place chicken thighs on a cutting board and season both sides generously

    • Chop fresh spinach into smaller pieces until you have 1 1/2 cups worth and set aside
    • In cast iron or oven safe dish, pour in heavy whipping cream with spinach, tomatoes, sundried tomatoes

    • And don't forget that garlic

    • Stir all ingredients together until it resembles this

    • Once all ingredients are in the cast iron, nestle in each chicken thigh into the mixture

    • Add a pad of butter to the top of each chicken thigh

    • along with 1/2 cup of shredded parmesan cheese on top of the dish
    • Bake 375 for 35 mins then turn oven to broil and broil for 5 mins

    • While the chicken is baking in oven, cut up and fry the pancetta

    • I cut up the pancetta to look like this

    • Once it is cooked you will want to blot off the grease and let it set until the dish comes out of the oven

    • About 7 minutes remaining on dish, boil water in a pot and cook the angel hair pasta until al dente.
    • Once chicken reaches 165 degrees take out of the oven and sprinkle with remaining parmesan and sprinkle panchetta and add parsley as a garnish.

    • Serve whole piece of chicken over the angel hair pasta

    • Make sure to scoop out the sauce and pour on top of the chicken and pasta
