Nothing better than a delicious almost zero effort slow cooker meal!! Am I right?

As a Crazy Busy Mama of 4, it’s meals like this that help me Reclaim The Table with my sweet family putting intentional time together around the dinner table instead of stressing in the kitchen! 

My hope is it does the same for you! 

So if you are a taco lover, you will absolutely love this one! 

Here is how I did it! 

Slow Cooker Carne Asada Tacos

Ingredients:

3 lbs Flank Steak (skirt steak will work)

1 Tbsp Olive Oil 

1/2 onion chopped 

1 cup low sodium beef broth 

1 bundle cilantro (chopped) 

1 tsp salt 

1 tsp pepper

2 tsp minced garlic 

1 Tbsp Chili Powder

1 tsp paprika

1 tsp cumin

2 fresh limes juiced

24 mini corn tortillas 

1/4 cup butter 

Low 6-8 hours 

Until it pulls apart like this…

Meat should shred fairly easily… if not, then let it cook longer! Once tender simply shred meat with forks or I personally love this tool that is shown in my “how to” video below. https://amzn.to/3ANgkgb It fabulous for shredding chicken too!

Directions:

  • Place the steak in a crock pot. Rub the olive oil over the steak.
  • Then mix together the garlic, chili powder, paprika, salt, pepper and cumin together in a small bowl. Rub this mixture over the steak.
  • Then top with the lime juice from 2 of the limes, chopped cilantro and diced onions. Pour the beef broth around the steak in the crock pot.
  • Cover and cook on low for 6-8 hours or cook on high for 3-4 hours.
  • After the cook time, shred the beef and top with the remaining lime juice from the other lime.
  • Then melt the butter in a large skillet or on a griddle. Fry the mini corn tortillas in the melted butter for 1 minutes or until the tortillas are soft.
  • Allow them to cool slightly. Then top the mini tortillas with the beef and your favorite taco toppings. 

I love to use my griddle for quick easy delicious corn tortillas! Makes all the tortillas at once instead of having to fry up each one!

Then add my favorite toppings which always include cheese for me – love cheddar & queso fresco and a bit of cilantro! Fresh chopped tomato & fresh Avocado if I have some ripe on hand. Oh yum!  It’s making me hungry as I type! 

Oh, and if you are not shredding your own cheese trust me start shredding its so much better! Not to mention, the stuff that is in pre shredded… wowza- I mean I get it saves time but wow I had no idea! A simple google search you will be on to shredding your own too, not to mention it is more affordable too! I have found the most convenient shredder and its even dishwasher safe too!
