I don't know about you, but I love a Simple Egg Roll Recipe ! Sometimes I even find myself wanting Chinese take out in order to get one. So I decided to try making them at home and I am obsessed with my Egg Roll even more so than the Chinese take out version. Never did I think that was possible, but mama these are so good. And they aren't heavy or greasy and even healthier for you too! And only take 8 minutes to cook up in the air fryer! If you are not cooking with an air fryer you must try it! This Air Fryer has over 65,000 reviews and ranks at 4.6! It's a great price and comes in a variety of different sizes for your family's needs. It's all things fried without the fried. So these Egg rolls in the air fryer you have to try them! In fact they are perfect with Egg Roll in a Bowl because it is everything in that easy 15 minute skillet meal is what makes up these Egg Rolls- well except for the actual wrapper.

These two together will make the perfect busy weeknight dinner and guaranteed to be a family favorite. You could even make these Egg Rolls Vegetable completely meat free. Great appetizer or paired with a meal, or if you are me a few of these incredible egg rolls could be a meal!

Ok mamas without further delay, here is how I made these Egg Rolls all in my air fryer at home.

Simple Egg Roll Recipe

  • Egg Roll Wrappers
  • 1 lb ground sausage
  • 16 oz Coleslaw Mix I use tri-color & prefer to use 2 bags as they cook down
  • 2 tbsp low sodium soy sauce
  • 1 tbsp ginger
  • 1 tsp minced garlic
  • 1/2 cup green onions sliced
  • 1 tbsp red pepper flakes *optional – this will add heat to the skillet meal

Once you put the finishing touches on the inside filling of the Egg roll let all the flavors marinate together for a few moments. You can see step by step photos and video tutorial just for the fill HERE

Lay the egg roll wrappers out on a cutting board along with a small bowl with water (more on this in a minute)

Take a large scoop full of filling mixture and add to the middle of the egg roll wrapper.

Roll up starting at the bottom with one roll then each side diagonally like this.

Use the small bowl with water to wet your fingers are you press the wrapper together.

Once you have it wrapped up the egg roll should look like this.

Spritz each roll with avocado oil and place in Air Fryer at 400 for 8 mins. Until they turn golden brown.

We made 6 of these Egg Rolls to have as a side with our Egg Roll in a Bowl. I used half for egg roll and half as the Skillet meal. If you wanted more you could easily double recipe, but this one recipe if eating for Egg Rolls alone would make 16-18 rolls.

Ingredients
  

Egg Roll Filling

  • 1 lb ground sausage
  • 16 oz coleslaw I use tri color- prefer to use 2 bags
  • 2 tbsp low sodium soy sauce
  • 1 tbsp ginger
  • 1 tsp minced garlic
  • 1/2 cup green onions
  • 1 tbsp red pepper flakes Optional – this will add heat

Egg Roll Wrappers

  • 16 oz Egg Roll Wrappers
  • 1/2 tsp Avocado Oil

Instructions
 

Egg Roll Filling

  • brown up a pound of ground sausage in skillet over med-high heat
  • once sausage is cooked add coleslaw mix – I love to use two and if you do two you will want to incorporate about 8 ounces at a time and cook as you go so the coleslaw cooks down 
  • once combined and low sodium soy sauce, garlic and ginger
  • mix all ingredients together and let cook up for about 3-5 mins
  • if you like heat a bit of red pepper flakes- but this is optional
  • then add sliced green onion to the top and let combine for a few mins

Egg Roll Wrapped

  • Take an Egg Roll wrapper and lay it flat on a cutting board or hard surface. I just like to do them on a cutting board for easy clean up.
  • Take a large scoop of mixture and start rollin up diagonally
  • use a dap of water on the ends to make sure it stays together
  • once you have 6-8 Egg Rolls wrapped
  • spritz each Egg Roll with Avocado oil
  • Place in air fryer at 400 for 8 minutes
  • enjoy with favorite dipping sauce

Notes

For the Egg Roll filling:you could easily substitute and do ground turkey or chicken. Or even leave the meat out all together.
