Crescent Carrot Chicken Salad

Ingredients: Crescent Carrot Chicken Salad

Chicken Salad

  • 12.5 oz white chunk chicken
  • 1/3 cup celery chopped
  • 1 tbsp onion minced
  • 1/3 cup grapes red- sliced
  • 1/4 cup slivered almonds
  • 1/3 cup mayonnaise

Crescent Roll

  • 8 Grand Crescents
  • parsley

Instructions: Crescent Carrot Chicken Salad

Chicken Salad for Crescent Carrot Chicken Salad

  • In a large bowl- drain chicken and place in bowl and break apart with fork
  • Chop up onion, (if using fresh), celery and slice grapes and set aside
  • Add mayonnaise to the chicken and mix well
  • Then add chopped ingredients and slivered almonds too
  • Refrigerate until crescent rolls are done and cooled for stuffing.

Crescents Rolls for Crescent Carrot Chicken Salad

  • Preheat Oven 375
  • I like to use the grands crescents
  • Take 4 pieces of foil and crumple them up into a ball
  • Take 2 crescent triangles and flatten then place foil ball into each and roll up around the ball leaving the top open and bottom closed.
  • Shaping into a carrot shape with top remaining open and bottom closed.
  • Bake 12-15 minutes until golden brown
  • Once done carefully take out the foil and let cool. *note the crescent may tear a bit but that is ok just try to be as gentle as possible getting the foil out.
  • Once cooled and foil is out take a spoonful of chicken salad push down to bottom filling the crescent carrot up.
  • Once filled put a bunch of fresh parsley to the top to create the greenery for top of carrot
  • Double recipe if need to be depending how many you will need. Add them to a platter and enjoy

Feel free to double recipe as needed. I like to use the large crescents for easy stuffing, you can certainly try the regular size too. These are perfect for an Easter or spring themed lunch.
