5 tablespoons Knorr Tomato Chicken Bouillon, approximately 1 tablespoon per cup of cooked rice
1 container prepared queso or cheese dip
Flour tortillas, for serving
Tortilla chips, for serving
Homemade guacamole, optional for serving

1. Prepare the chicken

Start by cutting the chicken breasts into small bite-sized pieces.
Ella and Braydon are new in the kitchen and forgot this step… If you forget to cut up your chicken, no worries take it back out and cut it up so the chicken can cook all the way through!!

Heat a large skillet over medium heat and cook the chicken until it is completely cooked through and no longer pink in the center.
Sprinkle the fajita seasoning over the cooked chicken and stir everything together until every piece is coated.

2. Cook the rice

Prepare your white rice according to the package directions.
You’ll want approximately 5 cups of cooked rice for this recipe.
Once the rice is finished cooking, stir in the tomato chicken bouillon. We used approximately 1 tablespoon for every cup of cooked rice, so about 5 tablespoons total.
Mix really well so that flavorful seasoning gets distributed throughout all of the rice.
3. Build the casserole

Grab a large casserole dish and spread the seasoned rice evenly across the bottom.
Next, spoon the fajita-seasoned chicken evenly over the rice.
