Instructions
Cook the chicken
Cut chicken into small bite-sized pieces. Cook in a large skillet over medium heat until fully cooked and no longer pink.
Add fajita seasoning
Sprinkle fajita seasoning over the cooked chicken and stir until every piece is evenly coated.
Prepare the rice
Cook white rice according to package directions until you have about 5 cups cooked.
Season the rice
Once cooked, stir in about 1 tablespoon of Knorr Tomato Chicken Bouillon per cup of rice, or about 5 tablespoons total. Mix well.
Build the casserole
Spread the seasoned rice evenly across the bottom of a large casserole dish.
Layer the fajita-seasoned chicken over the rice.
Add the queso
Warm the cheese dip according to package directions until smooth and pourable.
Pour the warm queso evenly over the chicken and rice.
Serve
Scoop onto warm flour tortillas for easy burritos or serve straight from the casserole dish with tortilla chips.
Add homemade guacamole on the side if desired.
