  • 1 (16 oz) container plain Greek yogurt
  • ½ cup reserved pasta water
  • 1 (10 oz) bag frozen spinach, thawed and squeezed dry
  • 3 cups shredded Monterey Jack cheese
  • 1 (6 oz) can French’s Fried Onions
  • Butter or nonstick cooking spray
  • Salt and pepper, to taste

Go light on the salt since the soup, cheese, and fried onions already bring plenty of flavor.

1. Prep the baking dish

Preheat oven to 350°F.

Grease a 9×13-inch baking dish with butter or nonstick cooking spray.

I am using this absolutely ADORABLE cooking dish for under $20 at Walmart. Perfect for any fall occasion.

2. Cook the pasta

Bring a large pot of salted water to a boil and cook the pasta according to package directions.

Before draining, reserve ½ cup of pasta water.

Drain the pasta and set aside.

3. Build the creamy casserole

Add the cooked pasta to your prepared baking dish.

Then add the shredded chicken, cream of chicken soup, Greek yogurt, reserved pasta water, and well-drained spinach.

Stir everything together until the pasta is evenly coated.
