If there’s one thing every Crazy Busy Mama needs in her back pocket, it’s a quick and delicious 20-minute skillet meal! This Chicken Fajitas Skillet meal with pasta is my go-to lifesaver on those wild evenings when we are just walking in the door at dinner time. Whether we've been running errands, finishing up practice, or just lost track of time—this meal comes to the rescue, hot and ready in no time.
Let’s be honest, wouldn’t life be so much simpler if everything went exactly the way we planned? Ha! Keep dreaming mama! If you’re a Crazy Busy Mama like me, I know you just rolled your eyes and laughed a little. Because the truth is, motherhood and predictability don’t exactly go hand in hand. Just about every single one of our days are packed with curveballs—spilled snacks, missing cleats, unexpected meltdowns, or a surprise school project due tomorrow. Plans? What plans?

But here’s the beautiful thing: sometimes the sweetest moments are found in the unplanned. Just think about it, those spontaneous after-dinner walks? The kitchen dance parties while dinner sizzles in the skillet, or the deep belly laughs at the dinner table that comes out of nowhere? We couldn't plan those even if we tried! I believe moments like those are God's way to remind us He’s right there with us, smiling at our tightly held schedules, knowing full well He’s already written a better plan. And aren't we glad he has?!
I have a quote block that I walk by every day that says “God is able to do immeasurably more than all we ask or imagine.” And man! I am thankful for that! It just makes me want to sing “Our God is an awesome God” because HE is. HE is an awesome God!

But back to life as a Crazy Busy Mama… even though we are HIS, we still have to plan some things. We still have to juggle practices, school events, church activities, and everything in between. I almost caved and pulled into a drive-thru, but then I remembered I had left over chicken from fajitas the night before waiting at home. Twenty minutes later, dinner was done, the kids were fed, and I didn’t spend $50 on fast food. Win-win!

Ingredients for Chicken Fajitas Skillet Meal
How to make Chicken Fajitas Skillet Meal: ingredients you need!
1-2 Chicken breasts chopped & cooked with fajita seasoning packet (I am using leftovers you could use chopped rotisserie chicken for ease)
2 tbsp butter
1 Tbsp Onion Powder
1 1/2 Tbsp minced Garlic
1 bell pepper chopped
2 1/2 cups of unsalted chicken broth
16 oz Penne Pasta
1 can rotel
1 1/2 cup of shredded Monterey Jack
4 oz cream cheese
Garnish with Green Onion & avocado

How to Make Chicken Fajitas Skillet Meal

Cook Chicken: In a large skillet over medium-high heat, add olive oil. Sauté sliced chicken until browned and cooked through. Remove and set aside. (I used leftover chicken so I got to skip this step!)
Sauté Vegetables: Prepare your skillet with butter garlic and onion powder. Sauté sliced bell peppers until tender.

Combine Ingredients: Return the cooked chicken to the skillet. Sprinkle fajita seasoning over the mixture and stir to combine.

Add Pasta and Broth: Pour in chicken broth, uncooked pasta and rotel. Stir well, ensuring the pasta is submerged.

Simmer: Bring to a boil, then reduce heat to low. Cover and simmer until pasta is al dente and most of the liquid is absorbed.
Shred Cheese: while the pasta is cooking, shred the cheese! We love freshly shredded cheese and this cheese grater wheel is a total game changer for shredding your own cheese!
Add Cheese: Add cream cheese and let melt and stir, then Sprinkle shredded cheese over the top. Cover and let it melt for a few minutes.

Serve: Garnish with optional toppings like sour cream, chopped cilantro, or a squeeze of lime juice.
