Someone can’t find their shoes. Someone forgot to charge their Chromebook. Lunches still need packed, hair needs brushed, and somehow everyone is asking what’s for breakfast at the exact moment you’re trying to get out the door.

That’s exactly why I love these Back to School Egg Muffins.

These Back to School Egg Muffins are warm, filling, packed with protein, and easy to prepare ahead of time. They’re made with eggs, cottage cheese, breakfast sausage, ranch seasoning, and potatoes with peppers and onions, so every bite is full of comforting breakfast flavor.

  • 18 eggs
  • 1 cup cottage cheese
  • 1 packet dry ranch seasoning
  • 1 bag frozen potatoes with onions and peppers
  • 1 pound breakfast sausage
  • Parchment paper muffin liners

I highly recommend parchment liners because eggs love to stick to regular paper liners and muffin pans.

How to make Back to School Egg Muffins: a step-by-step guide

1. Prepare the oven

Preheat your oven to 375°F.

Line your muffin pan with parchment paper muffin liners.

2. Blend the cottage cheese

Add the cottage cheese to a blender and blend until completely smooth.

You want it to look almost like sour cream.

3. Add the eggs

Add all 18 eggs to the blender and blend again until fully combined.

This step gives your Back to School Egg Muffins a fluffy, smooth texture.

4. Add the seasoning and potatoes

Pour the egg mixture into a large bowl.

Stir in the dry ranch seasoning and frozen potatoes with onions and peppers.

5. Cook the sausage

Brown the breakfast sausage in a skillet until fully cooked.

Drain any excess grease.

6. Fill the muffin cups

Add about 1 tablespoon of cooked sausage to the bottom of each muffin cup.

Pour approximately ¼ cup of the egg mixture over the sausage.

7. Bake

Bake for 20–25 minutes or until the centers are fully set.

  • 18 large eggs

  • Blend the cottage cheese until smooth. Add the eggs and blend until fully combined.

Mix the filling

  • Pour the egg mixture into a large bowl. Stir in the ranch seasoning and frozen potatoes with onions and peppers.
