These Strawberry Shortcake Ice cream Bars (or scoops) are not only absolutely delicious they are only 3 ingredients and are a cinch to put together for a sweet treat to beat the heat!

Who else remembers as a kid the tune of the ice cream truck going around the neighborhood as you run back in the house to gather up as much change as you could to get your favorite cold treat? Hot summer days with a special cold treat are the best of memories.

I remember Quintin vividly talking about his favorite ice cream truck treat was the Strawberry Shortcake bars, so I decided to whip up a copy cat version and this one was a hit! He absolutely loved these and are listed as one of his favorite in the COOKING WITH Q section of my blog to honor him in a big way!

I mean look at how scrumptious this looks, I think Q knew what he was talking about! So YUMMY!

Strawberry Shortcake Bars

Here is how I put together these yummy 3 ingredient Strawberry Shortcake Bars!

Ingredients: Strawberry Shortcake Bars

  • 40 Golden Oreos
  • 1/2 cup butter
  • 3 oz strawberry jello

Instructions: Strawberry Shortcake Bars

  • Preheat oven to 350
Strawberry Shortcake Bars
  • Process 20 of the Oreo cookies in a food processor
  • Once you process the cookies, melt the stick of butter, and add it to a bowl with the processed cookies
  • Add the Jell-O mix to the bowl, and mix everything well
  • Line up a baking tray with parchment paper, and flatten out the cookie mixture on the sheet pan
  • Once the cookie has been flattened out, you will want to Bake at 350 for 10 mins

  • Take the remaining cookies and crush them and set aside
  • Allow pressed cookie to cool then break apart and out those pieces back in the food processor and crush them into a crumble
  • Then take the remaining cookies that you set aside that are processed and mix them in well the crumbled cookie mixture

  • Once combined take a scoop of vanilla ice cream and roll it up in the crushed cookies
  • Serve in a dish and enjoy!

Side Idea:

Vanilla Ice cream of course! I think however this would be scrumptious also served with some coconut flakes!
