Say goodbye to potato soup and hello to loaded gnocchi soup!! 

Seriously, if you are a potota soup lover you have to try this variation! With all the flavors of a loaded baked potato, this soup is comforting and delicious perfect for cool weather .  Gnocchi, bacon, cheese, and scallions are combined in a light, creamy broth. Especially yummy in the colder months!

Here is how I did it:

Ingredients:

6-8 slices bacon cooked 

1 tablespoon bacon drippings 

1 1/2 TBSP onion powder or 1 small onion (diced) 

1 tablespoon minced garlic (about 3 cloves)

black pepper to taste 

1 hand full of chopped fresh Kale 

4 cups chicken broth (low sodium) 

1 pound gnocchi

1 cup heavy cream

Garnish:

8 ounces shredded cheddar cheese (garnish)

scallions (chopped, for garnish)
sour cream (for garnish)

Directions:

I cooked my bacon ahead of time and kept the grease. 

Combine onion,garlic, kale, black pepper &  once Kale is wilted add chicken broth, let come to simmer add heavy cream and then 4-5 pieces of bacon and gnocchi cook for 5 mins until gnocchi rises to top!

Garnish with sour cream, cheese, 

 scallions, extra crumbled bacon & enjoy!
