Stop letting those bananas go bad on the counter top and lets use them up by making some delicious and super easy Banana Bread.

But seriously, why is it when I want to make banana bread I have not quite ripe bananas and when I don't have time to make banana bread I have over ripe bananas coming out my ears! Ha…such is life! So if you are the latter, and have those bananas but not a whole lot of time this recipe is for you! Or…you can scroll down and check out my CBM Tip on what to do with those bananas until you do have a spare 15 mins to throw this recipe together.

Once your bananas start to look like this – Don't THROW them out! Its time to make some epic banana bread!

I can't decide if I like the loaf or muffins better. I suppose the loaf looks beautiful and the muffins are easy grab and go, which is a plus for our family of 6 and any Crazy Busy Mama who is constantly on the go! The muffins allow you to make some with nuts or chocolate chips and some without. So you will be able to please all those pickiest of eaters in the family! So which are you… loaf? or individual muffins?

However, you enjoy them- one thing I know for certain is if you are a banana bread lover you will love the ease and deliciousness of this one!

So here is how I did it!

Ingredients:

1 box or yellow cake mix

1 box of banana cream pudding mix

4 eggs 

1/2 c water

1/2 c oil ( vegetable or canola – I had to use olive oil because I had ran out)

4 mashed bananas

1 cup nuts & or chocolate chips (optional) 

Directions:

Preheat oven to 350

Mix all above dry ingredients

Mix all above wet ingredients – then combine them together and add walnuts/chocolate chips if you desire.

Bake 350

45-50 mins as a loaf

23-27 mins as muffins

Test with a toothpick to make sure it comes out clean and once it does you have a perfectly baked banana bread muffin or loaf.

Place in center of oven in a preheated oven. And yes this is my dirty oven, so not really a pinterest worthy pic but hey its real Crazy Busy Mama life. Banana Bread first cleaning oven next 😉

And after 45-50 mins this will be the deliciousness you will pulling out of your oven.(and maybe even for a moment forget your oven is even dirty… lol) And your home will be filled with the most amazing smells.

I mean look at this! Mouthwatering right?

Ingredients
  

  • 15.25 oz Yellow Cake Mix 1 Yellow Cake Mix
  • 3.4 oz Banana Cream Pudding Mix
  • 4 eggs
  • 1/2 cup water
  • 1/2 cup oil vegetable or canola
  • 4 bananas 4 mashed-over ripe work best
  • 1 cup walnuts optional
  • 1 cup semi sweet chocolate chips optional- I like mini semi sweet

Instructions
 

  • Mix together dry ingredients in a bowl
  • then combine wet ingredients together and add to dry
  • mix ingredients together well
  • add nuts/chocolate chips – optional
  • Bake 350 in preheated oven; 45-50 mins – until toothpick comes out clean
  • May need to adjust cooking time for loaf pan vs muffin tin
    Muffin typically 23-27mins

CBM Tip: Don't have time to mess with those over ripen bananas right now? Thats ok… just throw them i the freezer as is or peel and place in baggie and smash them so they are ready when you are! But don't you dare throw them away! Those bananas have so much more life left and when are not good for snacking anymore they are absolutely perfect for banana bread!
