Who else loves easy dips to put together for the summer? If so, you will love this Cowboy Caviar Dip! It is an absolute cinch to throw together last minute and will be a favorite for all! Minimal preparation which I love, and I know every crazy busy mama can appreciate that. Not to mention, it has perfect flavor and crunch too!

Summer dips are a saving grace for crazy busy mamas, offering a burst of flavor with minimal effort which is perfect for summer time snacking. From creamy avocado salsa to tangy tzatziki, these dips elevate any snack or meal. Whip up a batch of refreshing cucumber yogurt dip for a quick veggie accompaniment, or indulge in a zesty pico de gallo with fresh tomatoes and cilantro. Don't forget the classic guacamole, perfect for dipping chips or spreading on toast. OH MY DELICIOUS! Just look at those colors, don't they scream warm weather gatherings? Wether you are around the pool, hosting a BBQ or just enjoying your family time everyone will love this Cowboy Caviar Dip!

Just imagine diving in to this dip with your favorite tortilla chips!

Now that I got your taste buds poppin', here is how I put together this super quick Cowboy Caviar Dip!

Ingredients: Cowboy Caviar Dip

  • 15 oz black beans rinsed and drained
  • 15 oz pinto beans
  • 15 oz corn drained
  • 15 oz diced tomatoes
  • 1 red onion chopped
  • 1 green pepper chopped
  • 1 avocado chopped
  • 1 lime juiced
  • 6 oz Italian Dressing can add more if you want more flavor

Instructions: Cowboy Caviar Dip

  • In a large bowl take all beans, corn and diced tomatoes and place in together in bowl.
  • Dice up red onion, green pepper and avocado and add to bowl with other ingredients.
  • Slice and squeeze on top of all ingredients in bowl and mix together well.
  • Then take 6-8 oz of the Italian Dressing and add to the top mixing in the ingredients well.
  • Serve immediately with your favorite tortilla chips.

You will also want to store your lime wedges in the dip like pictured below in the bowl this will help to keep from the avocado turning brown. You can also serve it with the lime wedge in bowl, as I think it looks festive.

Crazy Busy Mama Tip:

To get the most juice out of your lime you can pop in the microwave for 10 seconds and it makes it easier to squeeze. Or you can also roll on the counter too. These two methods will make it easier to juice your lime. 

You will also want to store your lime wedges in the dip bowl this will help to keep from the avocado turning brown.

This Cowboy Caviar dip can be enjoyed immediately, or you can let set up in refrigerator for an hour prior to serving.
