Already asking yourself what you should cook for dinner tonight? Well, this Chicken Cobbler Recipe is the answer! I learned early on as a Crazy Busy Mama, I NEEDED some one-dish wonders that didn’t leave me chained to the stove while juggling homework help, laundry piles, and endless “Mom, I need you!” moments.

Enter: Chicken Cobbler. Think cozy chicken pot pie meets easy weeknight casserole—it’s comfort food at its finest and absolutely perfect for every Crazy Busy Mama!

If you’ve ever poured your heart into dinner, only for your kid to take one look and say, “not that again,” then friend, I feel you. 💁‍♀️ Trust me, I’ve been there. I had 4 babies in six years! When they were all little, there were nights that I felt like a short order cook at a diner where no one tips and the customers change their minds halfway through the meal.

I remember one stretch when my crew would only eat grilled cheese and apples. Every. Single. Night. I tried the whole mom playbook—cutting sandwiches into fun shapes, sneaking in veggies, even a little bribery (don’t judge, desperate times call for desperate measures 😉).

But here’s the truth: kids go through phases. And until those phases pass, you need meals that actually work. Like, crowd-pleasing, no-fuss, stress-free dinners that bring everyone to the table.

Because if there is one thing I have learned through the last few years if this time matters! You never know what tomorrow holds. We know who holds our tomorrow, but not what tomorrow may bring. We unexpectedly lost the rock of our family, my husband and best friend, Quintin in 2024; and not a day goes by that I am not grateful for the intentional time we spent as a family around the dinner table each night.

Would you love to have family dinners every night, but don’t know where to begin? You need to check out my Reclaiming The Table Cookbook. It was a project Quintin and I poured our hearts into the year before he was called home to be with the Lord.

The picky-eaters phase of parenting has come and gone in our house, I now have 2 kids in high school, and 2 already graduated and becoming adults. Each walking the path on which the Lord has placed them; and the truth? This phase of motherhood is bittersweet (cue all the tears about dropping my Kale off at college last week) but I couldn’t be more proud of each of our 4 children!

Okay back to the reason you are here, an easy delicious dinner for your family to reclaim the Dinnertime table… That’s where Chicken Cobbler Recipe comes in to save the day! It’s creamy, hearty, and wrapped in the most golden, buttery (*cough cough* Red Lobster) biscuit topping. And the best part? It all bakes together in one dish. No juggling sides, no mess all over the kitchen—just comfort food that practically makes itself.

Here’s why I love it:

  • ✔️ It’s a complete meal in one pan—chicken, veggies, and those dreamy biscuits.
  • ✔️ No standing over the stove—just mix, pour, and bake.
  • ✔️ It’s the perfect “cozy night in” dinner, and even picky eaters will go back for seconds (major win!).

Bonus tip? If your kids are super veggie-sensitive, keep the filling simple with just chicken and a creamy base. Then stir in the peas, carrots, or green beans on your side of the dish (I call this the “half-and-half mom hack” 🙌). That way, everyone wins—you get the comfort of the veggies, and your kids get the comfort of…not complaining. 😂

So if dinnertime has been feeling more like a battlefield lately, I hope this recipe gives you a little peace (and maybe even a moment to sip your coffee while it bakes). Because friend, this Chicken Cobbler isn’t just dinner—it’s sanity on a plate. 🥘✨ Three cheers for clean plates and happy bellies!
