Who else loves an amazingly flavorful chicken salad in the summer?

It is one of my favorites and actually holds a lot of memories for me.

Isn’t it wild how something as simple as chicken salad can carry so much more than just flavor?

It can carry memories…

Growing up, my mom made chicken salad the traditional way. Nothing fancy, nothing over the top… just simple ingredients mixed together with love.

It showed up on warm afternoons, quick lunches, and those in-between moments when we’d all gather without even realizing how special it was.

I didn’t know it then… but that was home.

And now, after walking through grief, I understand something I didn’t before—food has a way of bringing people back to you, even if just for a moment. A smell, a taste, a texture… and suddenly you’re right there again. Sitting at the table. Hearing their voice. Feeling the comfort you didn’t know you’d one day miss so deeply.

It’s a strange mix of emotions.
Because sometimes it hurts… and sometimes it heals… and most of the time, it’s both at once.

So this summer, I’ve found myself coming back to the things I love… but with a little twist. Taking those familiar, memory-filled recipes and trying them in new ways—like this loaded chicken salad.

It’s still rooted in everything I remember… but with a little extra flavor, a little crunch, a little fun added in.

Because honoring the past doesn’t mean we can’t create something new, too.

And maybe… just maybe… that’s part of healing. 🤍

• 2 cups rotisserie chicken, shredded

• 11 slices cooked bacon, chopped

• 2 cups Colby Jack cheese, shredded

• ½ cup mayonnaise

• ½ cup sour cream

• 1 whole purple onion, diced

• ¼ cup green onions, chopped

• 3 fresh jalapeños, diced

How to make Loaded Chicken Salad : a step by step guide

1. Prep ingredients

• Shred the rotisserie chicken

• Cook and chop bacon

• Dice onion, jalapeños, and green onions

2. Build the base

• In a large bowl, add shredded rotisserie chicken

3. Add mix-ins

• Stir in bacon, shredded cheese

and all chopped veggies

4. Make it creamy

• Add mayonnaise and sour cream

• Mix until everything is fully coated and combined

5. Chill (optional)

• Refrigerate for 30–60 minutes for best flavor

  • 2 cups rotisserie chicken shredded

    A nice twist on traditional chicken salad. I left out the jalapeño’s (family aren’t fans). My late husband enjoyed chicken salad; he would have loved this one! Thank you for sharing!
