This is a Keto Friendly not-so fried pickle recipe that you can make from the comfort of your own home! At our house we love any kind of pickles, everything from relish to spears to those big fat whole dills! And for all the keto fans out there, you have to try my Pickle roll up recipe!
Some of our favorite pickles are Wickles Pickles. They have so many different varieties from dill to hot to sweet! You seriously can find a style of Wickles to suit just about every taste preference. I just used the pickles that were on sale to make this Keto friendly fried pickle recipe, but I can just imagine how delicious it would be with some Wickles hot pickles. Shredded Colby Jack Cheese.
Pickles (I like to use the hamburger chip sliced ones because they fit great in the muffin tin.)

How to Make Easy Fried Pickle Recipe
Shred cheese. We love freshly shredded cheese and this cheese grater wheel is a total game changer for shredding your own cheese! It is dishwasher safe and saves us so much time and money.. AND we get to have FRESH cheese! I had some store bought left over cheese so I used a little of that and then finished the rest with freshly shredded cheese and you can definitely tell a difference. So treat yourself, get the cheese grater wheel!
Place pickle slices on a paper towel and blot dry

Add shredded Colby jack cheese to muffin tin

Add a pickle slice to the top of the shredded cheese

Top pickle slice with a little bit more shredded cheese

Bake on 400 for 15-17 minutes (for less crispy bake on 350 for 18-20 minutes)
