Okay mamas, who else loves pasta salad in summertime? Well this Easy Tortellini Pasta Salad is one you are definitely going to want to try! Not only is it bursting with flavor, but it is the easiest thing to whip up and keep in the fridge for an easy summertime lunch!
I mean just look at how yummy this looks! Don't you just want to try a bite? Well trust me, go ahead and stock up on paper plates because one bite won't suffice! You and your family will gobble this right up! And with the tortellini it is filling too, so hangry kiddos this summer!

That is one thing as a mama that I was surprised by, how much kids can eat in the summer! When our kids were no longer toddlers but not yet teens, I didn't expect my boys to be able to clear out the pantry and fridge in just a few days! I fully excepted them to eat us out of house and home once they were teens, because well they are teens; but I didn't foresee a 7 year old being able to snack that much! But that is just part of motherhood, you live and you learn and you learn to adapt!
Well summertime snacking is just part of the game; but with filling snacks like this Tortellini Pasta Salad, at least they were snacking on something healthy that I knew would sustain them for a little while! I mean- sure, you can buy those little individual bags of chips, but those go fast when your kids are always hungry!
So as a crazy busy mama to 4, I knew I needed to come up with something that I could keep in the fridge and pull out for a snack or even lunch! But I didn't want to cook something that added more work to my plate. So I needed something that was grab and go easy, and filling enough for a lunch but could also be a snack! And OF COURSE it had to be yummy or else my kiddos would beg for a drive thru, and that is not cheap when you have four hungry kiddos to feed! So I got cooking, and my favorite recipe that checked every box was definitely this Tortellini Pasta Salad!
This Tortellini Pasta Salad also is great for packing lunches for teens throughout the year! And a crazy busy mama hack? Get some styrofoam or plastic cups and forks and use those instead of paper plates! It will make it so much easier for little ones to eat this way! And they will even think it is something fun, lunch in a cup?!?! I mean what?? I just love how anything different like that can be fun for little ones.

Headed to the pool for the day? Or the park? Wherever your summer days may take you, Just pack a container of this Tortellini Pasta Salad in your cooler and some cups and forks and lunch will be served! It will be way faster than making 17 sandwiches and so much cheaper than grabbing something from a drive thru! You can't beat that!

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions (typically 3–5 minutes). Drain and rinse under cold water to stop the cooking process.

Prepare the Vegetables: While the tortellini is cooking, dice up your veggies

Combine Ingredients: In a large mixing bowl, combine the cooked and cooled tortellini, veggies and mozzarella cheese

Season: add parmesan cheese and a generous amount of cracked black pepper

Dress the Salad: Pour the Italian dressing over the salad ingredients. Gently toss to ensure everything is evenly coated.

Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
