Prepare the Vegetables: While the tortellini is cooking, dice up your veggies
Combine Ingredients: In a large mixing bowl, combine the cooked and cooled tortellini, veggies and mozzarella cheese
Season: add parmesan cheese and a generous amount of cracked black pepper
Dress the Salad: Pour the Italian dressing over the salad ingredients. Gently toss to ensure everything is evenly coated.
Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.

After cooking, Make sure to immediately rinse the pasta very throughly with cold water. Then put it into a new bowl, not back into the hot pot. This will ensure your noodles stay cooked to the perfect texture!
