The Best Honey Chipotle Smash Tacos

There is something really special about watching your kids grow into their own, and for me lately, that has looked like seeing Kale step into the kitchen at college and create something completely on his own.

If you know me, you know food has always been a huge part of our home. It’s where memories are made, where conversations happen, and where life just slows down for a second. This is how my mission, Reclaim The Table, came to fruition. So when Kale told me he made honey chipotle smash tacos at school and even wrote a full blog about it, I knew I had to share it here.

Kale~

I grew up in a house where food meant more than just eating. It was where we slowed down, talked, laughed, and made memories. So being at school, I’ve been trying to bring a little bit of that into my own routine… even if it’s just cooking something random I saw online and hoping it turns out.

That’s exactly how these honey chipotle smash tacos came to life.

I was scrolling late one night and saw a recipe for honey chipotle chicken quesadillas. Immediately, I thought, yeah… I could make that. And with Cinco de Mayo coming up, I decided to switch it up and turn it into honey chipotle smash tacos instead.

Honestly, that ended up being the best decision.

There’s something about trying new recipes at college that makes it more fun. Half the time I walk into the grocery store acting like I know exactly what I’m doing, when in reality I’m wandering every aisle trying to find ingredients like Mexican crema and overthinking which cheese to buy like it’s a big life decision.

But somehow, those random moments always end up being the best ones.

These honey chipotle smash tacos are one of those recipes that aren’t complicated, but they feel like something special. It’s the kind of meal you could make with friends, throw together on a random night, or cook when you want something quick that still tastes like you put in way more effort than you actually did.

The mix of sweet honey, smoky chipotle, crispy tortillas, melty cheese, and fresh toppings makes these honey chipotle smash tacos taste like something you’d order at a restaurant and then immediately try to recreate at home.

And the best part? They come together fast.

Ingredients

For the Chicken

  • 1 lb boneless skinless chicken thighs
  • 1 garlic clove, minced
  • 2 tbsp honey
  • 3 tbsp Cholula Chipotle Hot Sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp oil

For the Crema Sauce

  • 1/2 cup sour cream or Mexican crema
  • Juice from 1/2 lime
  • 1 tsp garlic powder
  • 1 tsp salt
  • 2 tbsp Cholula Original Hot Sauce

For the Tacos

  • Flour tortillas
  • Shredded Monterey Jack or Mexican blend cheese
  • Diced red onion
  • Fresh cilantro
  • Shredded lettuce
  • Diced tomatoes
  • Avocado slices (optional)

You can customize these however you want. Jalapeños, pico de gallo, extra hot sauce, guacamole, or pickled onions all work really well with the honey chipotle smash tacos flavor.

Step-by-Step Instructions

Step 1: Cook the Chicken

Start by cutting your chicken into bite-sized pieces if needed. Season with salt and garlic powder.

Heat oil in a skillet over medium heat and add the chicken. Let it cook without moving it too much at first so it gets a little color and crispiness.

Once it’s mostly cooked, add the garlic, honey, and Cholula Chipotle Hot Sauce.

At this point, the smell alone makes you feel like you actually know what you’re doing.

The honey balances the smoky chipotle perfectly and creates a sticky glaze that coats the chicken really well. Let it cook a few more minutes until the sauce thickens slightly.

Step 2: Make the Crema Sauce

While the chicken finishes, mix together the sour cream, lime juice, garlic powder, salt, and Cholula Original Hot Sauce.

This sauce pulls everything together. It cools down the spice just enough but still adds a lot of flavor.

I definitely used the leftovers for chips after.

Step 3: Build the Smash Tacos

Lay out your tortillas and add a layer of shredded cheese, then the chicken.

Heat another pan with a little oil and place the tacos down. Press them lightly with a spatula while they cook.

This is what gives the honey chipotle smash tacos that crispy, golden outside with the melty inside.

Flip once golden and cook the other side.

The crispy tortilla and melted cheese are easily one of the best parts.

Step 4: Add the Toppings

Top with red onion, lettuce, tomatoes, avocado, cilantro, and drizzle the crema sauce over everything.

The fresh toppings balance out the sweet and smoky flavor and make the honey chipotle smash tacos taste even better.

This was the point where I looked at them and thought… okay, these actually turned out way better than I expected.

Final Thoughts

I think recipes like these honey chipotle smash tacos are why food videos blow up so much. It’s not just about the food — it’s the experience.

Throwing on music while you cook.
Trying something new.
Making a mess.
Figuring it out as you go.

And then somehow ending up with something you’ll probably want to make again next week.

These honey chipotle smash tacos are fun, quick, and honestly just really good. They’re perfect for Cinco de Mayo, game nights, summer evenings, or just whenever you want something that feels a little different without being complicated.

Fair warning though… if you make these once, people are probably going to ask you to make them again.
