Who else loves a Shredded Chicken Chili crockpot meal for your family? If you ask me, there is nothing better than walking in from a busy day to a home cooked meal that you threw in the crockpot earlier that day. The aroma alone is worth it! Especially for this easy meal! And what I love about this Easy Shredded Chicken Chili is that you can easily make it keto friendly too, by simply leaving the beans out. It used to be one of my go to meals when I was learning about the Keto Diet. Shredded Chicken Chili is amazing the way that I have it outlined below with beans. However, leave them out if you are trying to do lower carb or keto and this hands down will be one of your favorite easy crockpot (or stove top)meals!

In the whirlwind of a crazy, busy mama's life, time-saving solutions become indispensable. Shredded Chicken Chili is so easy it may be a crime!! It's so simple and starts with a rotisserie chicken! So next time you are at the grocery store grab one of these or even two! Here are the ingredients you will need for Easy Shredded Chicken Chili

Ingredients:

Rotisserie Chicken – deboned and chopped or shredded

1 onion chopped

2 cups Chicken broth

10 oz diced tomatoes canned, undrained

2 oz tomato paste ( Here is what to do with the rest of your Tomato paste HERE – this tip is a great money savings hack in the kitchen)

1 tbsp Chili powder

1 tbsp Cumin

½ tbsp Garlic powder

2 cans of Ranch style beans

4 oz Cream cheese

Optional toppings:

Monterey Jack cheese

Avocado

Sour cream

1 Jalapeño  pepper chopped (optional)

Green onion

Shredded Chicken Chili Directions:

Debone Chicken and put in crockpot then add all ingredients in together and cook on low/warm (depending on your crockpot) and let all of these delicious ingredients combine together for 4-6 hours

Then when its ready add your favorite toppings such as cheese, ( I love Monterey Jack) and love to shred my own with this easy Shredder HERE, sour cream, sliced green onion, and I always love to add a bit of heat with a few slices of fresh jalapeño

Ingredients
  

  • 1 Rotisserie Chicken Chopped
  • 1 small onion diced -can sub minced onion 1 1/2 Tbsp
  • 2 cups Chicken Broth can use low sodium or no sodium
  • 10 oz diced tomatoes can undrained
  • 2 oz tomato paste
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1/2 tbsp Garlic powder
  • 30 oz Ranch Style Beans 2 -15 oz cans – Can omit if you want to make keto friendly
  • 4 oz cream cheese softened

Optional Toppings:

  • Montery Jack Cheese Shredded
  • Avocado
  • Sour Cream
  • Green Onion
  • Jalapeno fresh- sliced

Instructions
 

  • Debone Rotisserie chicken and chop up meat ( you can also shred)
  • Add remaining ingredients in with chicken – This is a true dump and go recipe
  • After 4-6 hours on warm/low depending on the setting of your crockpot, you will want to add your desired toppings.
  • we love to serve with tortilla chips but you can enjoy with cornbread or alone
  • *you can prepare over the stovetop – start with a 1 tbsp butter to sautee chicken in prior to adding remaining ingredients. Make sure to adjust cook time and allow at least 30 minutes to simmer on stove top for all ingredients to combine well
