I know, it doesn’t sound like anything groundbreaking, but trust me—it’s a total game changer. It’s the same cozy, stick-to-your-ribs meatloaf we grew up eating, but instead of baking in a loaf pan forever, it’s a mini meatloaf recipe so it cooks faster, gets those delicious crispy edges, and only dirties ONE pan. And because I’m all about shortcuts, I just toss some potatoes, carrots, or green beans around it so the whole dinner’s ready in one go. That's a Crazy Busy Mama hack if I've ever heard one!

The beauty of it? Once it’s in the oven, you’re basically off the hook. No babysitting a skillet, no juggling side dishes. Like my other sheet pan dinners, this one is quick, easy and mouthwatering! As a Crazy Busy Mama, I LOVE sheet pan dinners! They are essentially a ‘one-pot meal' which means minimal clean up! At my house, we are always trying to work smarter, not harder! So any meal that requires minimal clean up is a huge perk!

That is why you see me using crockpot liners in some of my Slow Cooker recipes! And for a sheet pan meal like this, I will use a pre-cut sheet of parchment paper to line the sheet pan. Then clean will just be recycling the parchment paper and paper plates!

How to make Sheet Pan Meatloaf: ingredients you need!

1 pound Ground Beef

2 Tbsp Sour Cream

1 Tbsp Ketchup

1/2 Tbsp Brown Sugar

2 tsp Dijon Mustard

2 Butter Crackers

1½ tsp. Pot Roast Seasoning

Pinch of salt

How to make Sheet Pan Meatloaf : a step by step guide

Preheat the oven to 425

Make the glaze: In another mixing bowl, combine ketchup, brown sugar, and mustard. Set aside.

Prepare and Mix Meatloaf – Finely crush crackers. In a mixing bowl, combine crushed crackers and 2 Tbsp. water. Let sit, 1 minute.

Then add ground beef & the rest of the ingredients. Mix well (hands work best!) and shape into small mini loaves.

Bake until meatloaves are fully cooked through (internal temp 160°F, about 20–25 minutes).
