Make the glaze: In another mixing bowl, combine ketchup, brown sugar, and mustard. Set aside.
Prepare and Mix Meatloaf – Finely crush crackers.
In a mixing bowl, combine crushed crackers and 2 Tbsp. water. Let sit, 1 minute. Then add ground beef & the rest of the ingredients. Mix well (hands work best!) and shape into small mini loaves.
Add mini meatloaves to a sheet pan. Brush loaves with glaze
Bake until meatloaves are fully cooked through (internal temp 160°F, about 20–25 minutes).
