Ingredients
  

  • 3 cups chopped cooked chicken
  • rotisserie chicken, canned chicken, or grilled chicken all work great
  • 1 can roasted corn drained
  • ¼ cup plain Greek yogurt
  • ¼ cup Duke’s mayonnaise
  • ¼ cup mild taco sauce
  • ¼ cup chopped cilantro
  • ½ purple onion finely diced
  • ½ cup cotija cheese
  • Salt & pepper to taste

Instructions
 

Make the dressing

  • In a large bowl, combine Greek yogurt, Duke’s mayonnaise, and taco sauce until smooth and creamy.

Add the mix-ins

  • Add chopped chicken, roasted corn, cilantro, purple onion, and cotija cheese.

Mix together

  • Stir until everything is evenly coated and fully combined.

Season

  • Add salt and pepper to taste.

Chill or serve

  • Serve immediately or refrigerate for 30 minutes for even more flavor.
