Ingredients
  

  • 2 8 oz blocks cream cheese, softened
  • 1 packet dry ranch seasoning
  • 2 cups shredded Colby Jack cheese
  • 1 package chipotle sausages diced very finely
  • 1 cup pecan halves for coating/feathers
  • 1 yellow bell pepper for beak
  • 2 peppercorn peppers or similar small round peppers for eyes
  • Crackers of choice for serving

Instructions
 

Mix the base

  • In a large bowl, combine softened cream cheese and ranch seasoning until smooth and creamy.

Add the flavor

  • Mix in shredded Colby Jack cheese and finely diced chipotle sausages until fully combined.

Shape the eagle

  • Form mixture into a large oval-shaped cheese ball. Slightly shape one end into a head if desired.

Add the feathers

  • Press pecan halves all around the outside to create a feathered eagle look.

Create the face

  • Cut a small triangle from the yellow bell pepper for the beak and use small round peppers or peppercorn peppers for the eyes.

Chill and serve

  • Refrigerate for at least 1 hour before serving to help firm up and blend flavors.
  • Serve with crackers, pretzels, or fresh veggies.
