Equipment

Ingredients
  

  • 2 15 oz cans fire-roasted corn, drained
  • 1 10 oz can Rotel (diced tomatoes with green chilies), drained
  • 1 cup plain Greek yogurt
  • ½ cup sour cream
  • 2 cups shredded Colby Jack cheese
  • 1 small purple red onion, finely diced
  • 1 packet garlic ranch seasoning mix

Instructions
 

Make the creamy base

  • In a large mixing bowl, combine the Greek yogurt and sour cream. Mix until smooth and creamy.

Add the seasoning

  • Stir in the garlic ranch seasoning mix until evenly distributed.

Add the mix-ins

  • Fold in the drained fire-roasted corn and Rotel.
  • Add cheese and onion
  • Mix in shredded Colby Jack cheese and diced purple onion.

Combine everything

  • Stir until fully combined and evenly mixed.

Chill and serve

  • Cover and refrigerate for at least 1–2 hours. Overnight is even better for maximum flavor.
