Taco Stuffed Bell Peppers

A cheesy, family-friendly dinner made with taco-seasoned turkey, rice, Rotel, and melty cheese baked inside colorful bell peppers.

Ingredients
  

  • 1/2 roll ground turkey
  • 2 cups white rice
  • 1 can rotel
  • 1/2 can water
  • 3 bell peppers
  • 2 cups shredded cheese

Instructions
 

Cook turkey in skillet until no longer pink.

    Stir in rice, Rotel, and water. Simmer 5 minutes.

      Preheat oven to 400°F.

        Cut peppers in half lengthwise and remove seeds.

          Fill each half with turkey mixture.

            Top with cheese.

              Bake 20 minutes until cheese is golden and bubbly.

                Serve warm.

                  Notes

                  • Use any color bell pepper.
                  • Great for meal prep — stores well for 3–4 days.
                  • Add black beans or corn to stretch the filling.
