Line the center of a large tray with parchment paper. Spread hummus into a large circle to form the face. Arrange carrot chips around the bottom and sides to create a beard. Add broccoli across the top to form the hat base. Place sliced bell peppers along the sides of the hat. Add another row of broccoli above to complete the hat. Use cucumber slices for eyes and black olives for pupils. Arrange black olive slices into a smile. Hollow out a bell pepper and fill with ranch dressing for dipping.
You can use any flavor of hummus.
Add snap peas or celery to fill empty spaces.
Best served the same day for freshest veggies.
Store leftovers covered in the refrigerator for up to 2 days.
