Preheat your oven to 375°F and lightly grease a 9×13 baking dish.
In a large skillet over medium heat, cook the breakfast sausage and spicy sausage until fully browned, breaking it into crumbles as it cooks. Drain excess grease if needed.
Spread the hash browns we love shredded Simply Southwest Potatoes evenly across the bottom of the prepared baking dish.
Layer the cooked sausage evenly over the potatoes.
In a large bowl, whisk together the eggs, onion powder, garlic powder, and heavy whipping cream until well combined.
Pour the egg mixture evenly over the sausage and potatoes.
Sprinkle 2 cups of shredded cheese over the top.Cover loosely with foil and bake for 30 minutes.Remove foil and continue baking for 25–35 minutes, or until the center is set and a knife inserted comes out clean.
Let the casserole rest for 5–10 minutes before serving.
