Ingredients
  

  • 3 cups shredded rotisserie chicken
  • or canned chicken
  • 1 plain Greek yogurt single serving
  • ½ purple onion diced
  • 1 red bell pepper diced
  • 1 can roasted corn drained
  • ½ cup black beans drained & rinsed
  • ½ tablespoon chili powder
  • ½ tablespoon garlic seasoning
  • ½ cup fresh cilantro chopped

Instructions
 

Add chicken to bowl

  • Place shredded chicken into a large mixing bowl.

Add creamy base

  • Stir in Greek yogurt until the chicken is evenly coated.

Add mix-ins

  • Add diced onion, red bell pepper, roasted corn, black beans, and chopped cilantro.

Season

  • Sprinkle in chili powder and garlic seasoning.

Mix together

  • Stir until everything is fully combined.

Chill or serve

  • Serve immediately or refrigerate for 30–60 minutes for even more flavor.
