Slow Cooker BBQ Pineapple Chicken

Ingredients
  

  • 3 frozen boneless skinless chicken breasts
  • 1 18 oz bottle barbecue sauce
  • 1 20 oz can crushed pineapple, with juice
  • 1 green bell pepper sliced
  • 2 tablespoons all-purpose flour optional for thickening
  • ¼ cup water optional for thickening
  • Cooked rice or noodles for serving

Instructions
 

Add everything to the slow cooker

  • Place frozen chicken breasts in the bottom of the crockpot.
  • Pour the entire bottle of barbecue sauce and the crushed pineapple with juice over the chicken.
  • Add sliced green bell pepper.

Cook

  • Cover and cook on:

HIGH: 4–6 hours or LOW: 6–8 hours

    Cook until the chicken is fully cooked, tender, and easy to shred.

      Shred or chop

      • Use two forks to shred the chicken directly in the slow cooker, or cut it into bite-sized chunks.
      • Stir well to coat the chicken in the sweet and tangy sauce.

      Thicken the sauce — optional

      • Whisk together 2 tablespoons flour and ¼ cup water until smooth.
      • During the last 30 minutes of cooking, stir the mixture into the crockpot. Cover and continue cooking until the sauce thickens.

      Serve

      • Spoon the BBQ pineapple chicken and plenty of sauce over warm rice or noodles.
