Prep & Sauté the Veggies - Slice the purple onion and green bell pepper into strips. In a large skillet over medium heat, add olive oil and toss in the veggies. Season with salt, pepper, and garlic powder. Sauté until softened, about 5–7 minutes.

In a separate pot, cook the cheese tortellini according to package instructions. Drain and add them into the creamy Philly cheesesteak mixture.
