Ingredients
  

  • 1 1/2 lbs chicken breasts or thighs
  • 10 oz cream of chicken
  • 12 oz Stove Top Chicken Stuffing Mix
  • 1/4 cup milk
  • 6 tbsp butter
  • 6 slices pepper jack cheese

Instructions
 

  • Preheat oven to 350
  • Spray 9X13 dish with non stick cooking spray
  • Cover bottom of baking dish with chicken. I use 3 large chicken breasts and cut them in half
  • Cover chicken with sliced pepper jack cheese
  • In a bowl mix cream of chicken and milk well and spread over the top of chicken making sure all chicken is covered
  • Once chicken is covered, add stuffing mix to the top covering all areas of chicken
  • Place butter in a microwavable safe dish and melt and pour over the top of the stuffing mix in casserole dish
  • Cover dish with foil and bake at 350 for 55-60 mins until chicken is done at 160 temp

Pepper Jack cheese have too much heat? Try Swiss cheese for less heat.
