No Peek Chicken with broccoli

This easy one dish recipe is perfect for a family dinner! It's easy and so so yummy!

Ingredients
  

  • 2 cups Minute Rice
  • 1 can cream of chicken soup
  • 1 can water use the soup can for measuring
  • 3 boneless skinless chicken breast skinless chicken breasts
  • 1 packet dry onion soup mix
  • 1 bag frozen broccoli florets

Instructions
 

  • Preheat oven to 350°F
  • In a 9x13" baking dish, add rice, cream of chicken soup, water
  • Mix well to fully coat the rice.
  • Add broccoli to top and gently stir to spread the broccoli out evenly in the pan. (this is where you can control adding broccoli to only a portion of the dish)
  • Lay the chicken breasts on top of the rice mixture, pressing them down slightly.
  • Sprinkle the onion soup mix evenly over the top.
  • Cover the dish tightly with aluminum foil.
  • Bake for 1 hour. Do not peek while baking!
  • Serve hot — goes great with a side salad.
