Mississippi Pot Roast Sliders

Ingredients
  

  • 3 lb roast chuck roast
  • 8 oz peperoncini with juice
  • 4 oz garlic herb butter
  • 12 hawaiian rolls
  • 2 tbsp mayonnaise
  • 8 oz provolone cheese sliced

Butter Glaze

  • 2 tbsp butter melted
  • 1 tbsp garlic powder
  • 1 1/2 tsp chives dried

Instructions
 

  • Add Roast with butter and peperoncinis with juices to the top of the roast.
  • Cover with lid and cook on low for 8 hours until meat falls apart
  • Shred meat in slow cooker with meat masher or a fork
  • Preheat oven to 350
  • Once you have meat shredded, you will take a 9X13 oven safe dish and spray with nonstick spray
  • Add bottoms of the buns down on the dish and add light mayonnaise over them
  • Then with a tong add meat over the top of all the buns then slices of provolone cheese covering the surface of all the meat. These will overlap and that is ok.
  • Once cheese is on take the top of the slider buns and place them on top.
  • Now make Butter Glaze and once made, baste Butter Glaze on top of the buns
  • Cover sliders with aluminum foil and Place in the oven at 350 for about 10-15 minutes until cheese melts
  • Once cheese is melted they are ready to serve.

Butter Glaze

  • Melt butter (if you have left over garlic herb butter you can use this too) in microwavable glass container for 20- 30 seconds until melted
  • Mix in garlic and chives

Notes

Have a busy week ahead, you can make this Mississippi Pot Roast ahead and store it in the refrigerator for up to 5 days. Just heat the meat and prepare sliders for your chosen night.
I prefer chuck roast for these sliders, but any roast will do. Just make sure to cook low and slow until you can shred the meat 
You can add any toppings you wish to these sliders, however we love them as is and I add horseradish sauce to mine to add a little kick. If everyone loves horseradish you can add these before you put the sliders in the oven or you can simply add to desired sliders once they come out of oven. 
Depending on how high you pile the meat on the sliders, you will be able to make anywhere from 12-15 sliders. 
Don't have garlic herb butter? You can use regular butter too.
