Hearty & Easy Breakfast Casserole

The perfect Saturday morning crowd-pleaser! Loaded with eggs, sausage, hashbrowns, and melty cheese, this casserole is easy to prep the night before and bake in the morning. Feeds a hungry crew (and all their friends!) with one simple dish.

Ingredients
  

  • 10 large eggs
  • ½ loaf of bread cut into cubes
  • 1 individual cup of cottage cheese
  • ½ bag of shredded cheese cheddar or Colby Jack works great!
  • 1 bag of diced ham
  • 1 bag of frozen potatoes with peppers and onions

Instructions
 

  • Preheat oven to 350°F and lightly grease a 9x13 baking dish.
  • Using scissors or a knife, cut bread into bite-sized cubes and layer it evenly in the bottom of the dish.
  • Pour the bag of potatoes over the bread.
  • Add the diced ham on top of the potatoes.
  • In a separate bowl, whisk together 10 eggs and the cottage cheese until smooth.
  • Pour the egg mixture evenly over everything in the baking dish.
  • Sprinkle half a bag of shredded cheese over the top.
  • Bake for about 45 minutes, or until the eggs are set and the cheese is golden and bubbly.
