Fruit Salsa and Cinnamon Chips

Ingredients
  

  • 8.8 oz strawberries diced
  • 11 oz blueberries
  • 4 kiwi diced
  • 3 apples fuiji
  • 1/4 cup sugar or substitute with Honey - reduce to 1/8 cup
  • 3 tbsp lemon juice

Cinnamon Chips

  • 6 flour tortilla
  • 4 tbsp butter melted
  • 3/4 cup sugar
  • 1 1/2 tbsp cinnamon

Instructions
 

  • Wash and prepare all fruit
  • On a cutting board fruits and dice up into small pieces, to resemble a chunky style salsa.
  • Once fruit is cut, add all fruit to a large bowl and mix well
  • Then add sugar ( or honey if substituting honey) to the top of the fruit and add lemon juice on top and mix well coating all fruit.
  • Cover and let set up in refrigerator as you are preparing the chips.

Cinnamon Chips

  • With kitchen shears cut tortillas into triangles
  • Melt butter
  • In a small bowl combine sugar and cinnamon
  • Take each tortilla piece and cover with butter and sprinkle with cinnamon sugar on both sides
  • Bake chips on cookie sheet with parchment paper at 425 for 5 mins or desired crispness. These cook up quick so make sure to watch so they don't burn.
  • After fruit salsa has been refrigerated take out an mix well and serve with Cinnamon Chips and enjoy!

Notes

Trying to reduce refined sugar? Try honey instead. You will want to use less honey than sugar as sugar can be two to three times sweeter than white sugar. Acacia honey is a bit more sweet than where as wildflower is a bit less, but the general rule is for every cup of sugar substitute 1/2 cup to 2/3 cup of honey. So in this recipe's case, you will adjust to 1/8 of a cup of honey. You can always drizzle more if you wish.
