Ingredients
  

  • 1 box Funfetti cake mix
  • 1 tub Cool Whip
  • 2 eggs
  • Green food coloring
  • Confectioner’s sugar for rolling

Instructions
 

  • Preheat the Oven
  • Set oven to 350°F. Lightly grease a cookie sheet or line with parchment paper.
  • Mix the Dough
  • In a large bowl, mix eggs, Cool Whip, and Funfetti cake mix until well combined.
  • Add a few drops of green food coloring and mix until you get the perfect Grinch-green hue.
  • Scoop & Roll
  • Using a small cookie scoop, form dough balls and roll each one in confectioner’s sugar until fully coated.
  • Bake
  • Place dough balls on the baking sheet, spacing evenly.
  • Bake 10–12 minutes or until edges are set and centers are soft.
  • Cool & Enjoy
  • Let cookies cool slightly before transferring to a rack. Serve warm or store for later.
