Preheat the Oven
Set oven to 350°F. Lightly grease a cookie sheet or line with parchment paper.
Mix the Dough
In a large bowl, mix eggs, Cool Whip, and Funfetti cake mix until well combined.
Add a few drops of green food coloring and mix until you get the perfect Grinch-green hue.
Scoop & Roll
Using a small cookie scoop, form dough balls and roll each one in confectioner’s sugar until fully coated.
Bake
Place dough balls on the baking sheet, spacing evenly.
Bake 10–12 minutes or until edges are set and centers are soft.
