Equipment

Ingredients
  

  • 1 lb ground beef
  • 2 cups long grain white rice
  • 3 cups beef broth
  • 1 cup celery diced
  • ½ cup orange bell pepper diced
  • 1 tablespoon minced garlic
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon dried thyme
  • ½ teaspoon parsley flakes
  • Salt & pepper to taste

Instructions
 

Brown the beef

  • In a large skillet or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease if needed.

Cook the vegetables

  • Add celery and bell pepper. Cook for 4–5 minutes until softened.

Add seasoning

  • Stir in garlic, Cajun seasoning, thyme, parsley, salt, and pepper.

Add the rice

  • Pour in uncooked rice and stir well to coat in the seasonings.

Add broth and simmer

  • Pour in beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.

Fluff and serve

  • Fluff with a fork and garnish with extra parsley if desired.
